Our Favourite Mother's Day Breakfast in Bed Recipes

At Beds Are Uzzz, we know how important those memories as a child are, and how breakfast in bed is one of those treats that many mums don’t often get to enjoy without worrying about cleaning up crumbs afterwards. So, on the day of the year that’s dedicated to spoiling your mum, we thought we’d create a list of our favourite breakfast in bed recipes, for you to cook up a treat for your mum this Mother’s Day…

  1. Pancakes with seasonal berries

This is one of our all time favourites, and it’s so easy to whip up with your children involved! We’d recommend cooking up some fluffy ‘American style’ pancakes, pairing it with a handful of seasonal fruit and a drizzle of maple syrup!

135g plain flour

1 tsp baking powder

½ tsp salt

2 tbsp caster sugar

130ml milk

1 large egg, lightly beaten

2 tbsp melted butter

To serve:

Maple syrup

Fresh fruit (banana, blueberries, strawberries, etc.)


First, sift the flour, baking powder, salt and caster sugar into a large bowl. And in a separate bowl, lightly whisk together the milk and egg, followed by the melted butter.

Combine the two mixtures and, using a fork, beat until you have a smooth batter (no lumps!). Let the mixture stand for a few minutes whilst you heat a non-stick frying pan over a medium heat.

Add a knob of butter, and when it’s melted add a ladle of batter to the frying pan. The mix may seem quite thick in the pan, but this is the key to a fluffy pancake. To make them super fluffy, you should wait until the top of the pancake begins to bubble, and then you can flip it on over. The pancakes should rise to be about ½ an inch thick.

  1. Poached egg and avocado on sourdough

This is a relatively simple recipe that gives so much flavour, which is why we love it so much. Poached eggs are notoriously tricky to get right, so we’ve popped in our trick to the perfect poached egg to make sure you can’t go wrong with this recipe for this Mother’s Day.

2 eggs

2 ripe avocados

4 slices sourdough

1 tbsp extra-virgin olive oil

To serve:

1 lime, juiced

A few drops of Tabasco (or similar) hot sauce


Bring a large pan of water to the boil, and add the vinegar. Meanwhile, cut each avocado in half, discard the stone, and scoop out the flesh and pop it into a bowl, mix half of the lime juice, a pinch of salt and a few drops of hot sauce and using the back of a spoon, or fork, smash the avocado until the texture becomes chunky but spreadable.

Poach the eggs in the pan of boiling water for 2-3 minutes, the whites should be set but the yolk should be nice and runny. *Our top tip for the perfect poached egg is to crack an egg into a bit of cling film, wrap it around and pinch the top, you should be able to pop this into the pan easily for a few minutes and the poached egg should stay intact.

Toast the sourdough and spread the smashed avocado on, top with the poached egg. Serve with a crack of black pepper and a few splashes of hot sauce!

  1. The classic ‘full English’

Who could say no to a classic full English breakfast? You need the full works for this one: sausages, bacon, mushrooms, tomatoes for the ultimate breakfast in bed for Mother's Day. 

Ingredients (per person):

2 Sausages

2-3 Bacon

1-2 Tomatoes

2 Flat mushrooms

1 large egg

1 slice of bread

½ a tin of baked beans

To serve:

Ketchup or brown sauce


First up, pop the sausages under the grill on a low heat as these will take the longest to cook. Depending on the kind of sausages you prefer, they should take between 20-25 minutes to be ready to eat, but always check the inside is piping hot before serving.

When the sausages are half way through you can start getting the rest of the breakfast together. Fry up the bacon to your preferred liking, meanwhile, start deciding the favoured style of egg: scrambled, fried, poached? Start cooking this when everything else is ready to serve.

Using a griddle pan (preferably, a normal frying pan will do) cut the stalk off the mushrooms and place them on a medium heat and fry. Pop the baked beans into a small pan and cook them on a low heat for a few minutes.

  1. A breakfast bap

Barm, bap, bun, sandwich - whatever you like to call it, it’s a breakfast staple and you certainly can’t go wrong with this simple, but super tasty, treat this Mother’s Day. Choose your mum’s favourite filling, and away you go.

Ingredients (per person):

Filling of your mum’s choice (sausage, egg, mushroom, cheese etc.)

Knob of butter

1 bread roll

To serve:

Ketchup or brown sauce


Our favourite filling would have to be bacon and eggs, and the best part is when you bite into the sandwich and yolk runs (yum). To make this, fry up the bacon to the preferred level (or you could pop it under the grill).

For the perfect fried egg, heat a knob of butter in a frying pan, and crack the egg straight in, when the edges start to get crispy start to skim the melted butter over the egg to cook the top of it. With this recipe, it’s probably best to keep small children away as the hot butter might splatter!
